Yesterday was a wonderful, kind of gloomy, day. We had high winds, freezing rain, some snow pellets, and all in all it was a great day to be indoors. Some friends of ours just had a baby, who is adorable BTW, and tonight was my night to bring their family a meal. Having just had a baby, and 2 weeks of meals brought in, I had in mind to vary the menu a little bit. Something warm, something unusual, something tasty. This recipe from Taste of Home fit the bill. The results were quite tasty, if I do say so myself. AND simple. 🙂 Even better.
Onion Beef Au Jus
1 Boneless beef bottom roast (4lbs)
2 T. vegetable oil
2 Large sweet onions, cut into 1/4″ sliced
2 T. Butter or margarine
5 c. water
1/2 cup soy sauce
1 envelope onion soup mix
1 garlic clove, minced
1 t. browning sauce (Optional-I didn’t have this and wasn’t buying it.)
1 package of bread buns (Your choice-I used party buns)
Swiss cheese slices
In a dutch oven over medium-high heat, brown roast on all sides in oil; drain. In a large skillet, saute onions in butter until tender. Add the water, soy, sauce, soup mix, garlic and browning sauce if serired. Pour over roast. Cover and bake at 325 degrees for 2 1/2 hours or until meat is tender.
Remove roast from juices, and allow it rest for 10 mintutes before slicing. Return meat to pan juices. (This can be refridgerated at this point if you aren’t ready to serve).
When ready to serve, cut buns in half and spread with a little butter. Place on a baking sheet and allow to toast in oven till lightly golden. Remove and top with beef, onions, and a slice of swiss cheese. Return to heat (broil) unitl cheese is melted. *REMEMBER*-Grandma says “Never turn your back on the broiler.” Serve with pan juices (Au Jus) for dipping.
I fed the friend’s family of 7, and our family with this roast. It smelled DIVINE in the house all day. Hope you try this. It is EXCELLENT!
